Tracing natural antioxidants
Human body is endowed with antioxidant enzymes for its protection from the action of free radicals. Also, humans consume antioxidant substances through food intake. H2O2 (Hydrogen peroxide) is a chemical substance which is produced almost in every cell and is very dangerous for the human body. The cells can neutralize H2O2 with a specialized enzyme named catalase. Catalase is easily detected in bell peppers by the production of bubbles due to the breakdown of H2O2 once we add it. Catalase under high temperatures or extreme PH values can lose its structure as well as its ability to neutralize H2O2.
